Recipe: Scrambled tofu

I made this a few weeks back and it's really one of those simple things that I cannot believe I've never made before... I'm actually disgusted with myself, ha! It's now, officially, one of my favourite meals.




















Ingredients 

  • Tofu (drained -pat down with kitchen paper to remove access water, if needed)
  • Salt and pepper
  • Curry powder -If desired
  • Vegan spread (if living in Ireland, I suggest Dunne's Store version, Sunlite, or the brand Pure is easily available) -Or dairy either, depending on your diet
  • Any chopped additional ingredients that you fancy. Think of things ya might add to scrambled eggs. My favourites for this are -Red onion, spring onion, peppers or just simply mushrooms (like in the photo)

Method

  1. Heat pan. I use Fry Light spray for a healthier option, but oil works either.
  2. When heated, add chopped extras -Vegetables and such
  3. When half way cooked, add tofu and mash down with fork
  4. Add in pepper, salt, and if you fancy, a wee bit of curry powder. Even chilli flakes are good. Think of anything that you like to add to scrambled eggs.
  5. Taste to see if you need to add more salt, pepper, etc. and cook for further couple of minutes, stirring and mashing regularly, as required, and add more spray if need.
  6. Serve with toast and/ or coffee, and a smile!
